Very Simple Mother's Day Brunch
Mother's Day can be tricky when it comes to making plans, and who we should be celebrating. In my mind kids are not a life requirement, so Mother's Day is a day to celebrate all women. Our ability to nurture and cultivate our lives lends to the mothering spirit we celebrate on Mother's Day, so no matter where you are on your adventure, I've got a very simple Mother's Day menu for you. Asparagus and Herb Spring Frittata

Serves 4
*Recipe is doubled from original
2 TBS Olive Oil
1 Shallot Diced
2 Zucchini sliced in disks then each disk cut into quads
6-12 Asparagus stems cut into 1" pieces
1/2 Cup Fresh Ricotta Cheese
8 Large Eggs
4-6 Springs of Parsley
3-5 Springs of Thyme
Salt and Pepper
Preheat oven to 400 degrees. Sautee shallots and vegetables, heat 2 tablespoons olive oil in a 10" cast iron (or other oven-safe) skillet over medium-low and cook vegetables. Whisk together eggs and a generous amount of salt and pepper. Pour eggs into Skillet with vegetables and cook for approximately 4-5 minutes until bottom is set (may take a few more minutes, don't panic!). Sprinkle a few dollops of ricotta cheese. Transfer to the oven and bake for another 8-10 minutes until puffed up, doesn't jiggle and is slightly browning. Remove and let cool slightly. Chop some fresh herbs atop before serving.
Croissants and jam
Serves 4
Croissants from Local Bakery or Grocery
Tiny Jars of Jam
Head to your local bakery or grocery and buy 6 croissants and a few little jars of jam. Place croissants in a bowl with a cute napkin or kitchen towel underneath. Arrange jam on a separate plate. Ready to serve.
Mimosas
Sparkling Wine
Orange Juice
Sparkling Wine and Orange Juice. Make them as strong or as weak as you like. Serve cold.
